Steve's Basic Split-Pea Soup, Vegan

140g dry / uncooked split peas1 medium carrot, chopped1 celery stalk, chopped1 medium onion, chopped1 clove of garlic, chopped1 quart water or vegetale stock1 tsp oilsalt, pepper, herb bundleHerb bundle: 1-2 allspice berries, bay leaf, parsley
1. Rinse and drain peas.
2. Sautee OR sweat vegetables.
3. Add peas to vegetables in a 2 quart or larger pot/pan. Add herb bundle, water or stock, and bring to a simmer. Cover loosely and simmer about 1 1/2 hours, or until peas are tender, stirring occasionally in case they stick to the bottom of the pan.
4. Remove the herb bundle from the soup. Purée the soup with a blender. An immersion blender works great for this.
5. Return the purée to the pot and heat to serve. Add salt and pepper to taste. Ladle into warm bowls and garnish with croutons and parsley or chives.
