Spinach Bacon Frittata

Ingredients
1 thick slice of bacon or 3 med slices chopped2 cups fresh spinach1/4 cup chopped red bell pepper 2 Tbsp chopped onion4 extra large eggs1/4 cup 2% Cheddar cheeseblack pepper to taste
Directions
Fry chopped bacon pieces on medium heat until cooked through. Add red pepper, onion, and black pepper and stir until tender then add torn up spinach and turn down to med-low. When spinach has cooked down, add eggs(scrambled in a bowl) on top of mixture and then sprinkle with cheese. turn down low and cover. Cook until eggs are set. Makes two servings.

Bacon could be left out for a lower fat version or turkey bacon used instead.
