Easy Calabacitas (Mexican Zucchini)

2 medium to large zucchinis, sliced thinly1/4 of a large onion, chopped4 tablespoons salsa of your choice (or to taste)*optional: 1 small bouillion cube for more flavor
Cut zucchini into thin, circular slices
Finely chop onion
-Spray some pam pan, or put a little bit of oil onto a nonstick pan on medium-high heat; add chopped onions
-Stir onions around until they start to brown
-Add all of the zucchini, and the salsa. Lower heat to medium
-Let cook for about 10 minutes, or until tender, stirring frequently
Makes 2 1-cup servings
