Zucchini and potatoes (Aloo Kuddu)

3 medium potatoes, peeled, quartered and thinly sliced2 medium zucchini (chappal kuddu) peeled, quartered and sliced1 tbsp canola oil1 large onion, halved and thinly sliced4 cloves garlic, mashed1 medium tomato, chopped1 tsp ground coriander1 tsp salt1/2 tsp red pepper1/2 tsp curry powder1-2 cups water
Heat oil in a large skillet with a cover. Brown onions and garlic. Add tomato and saute until tender. Add all seasonings and a bit of water. Mix well. Add potatoes first and saute about 2 minutes then add zucchini and about a cup of water. Mix, cover and cook about 10 minutes or until vegetables are soft. If any water left in the pan, cook it off until sauce is thick.
