Veggie Omlette

Ingredients
1/2 tsp Olive oil1 T onion, chopped1/8 cup tomato chopped1/4 c zucchini chopped1/4 c portebella mushroom chopped1tsp minced garlic (Spice World)1 tsp butter1/2 c egg betters1/4 c colby jack cheese, shredded1/4 wedge of avocado2 T Kirland Organic Salsa, optional
Directions
Saute veggies in olive oil. When soft, melt 1 tsp of butter in another pan and cook egg substitue, when set, add veggies, avocado and cheese and fold like an omlette. Top with salsa desired.
