Spinach & (Not) Ricotta Canelloni

Ingredients:-Onions, raw, 1 cup, finely chopped -Mushrooms, finely chopped, 1 cup-Garlic, 4 clove-Balsamic Vinegar, 1 tbsp -Alpro soya Dairy free alter to cream, 40 g-Olive Oil, 1 tbsp -Spinach, fresh, 200 g-Tofutti Cream Cheese Plain, 6 tbsp -Canelloni to fill dish-Canned Tomatoes, 1 can
Fry onions, Mushrooms and crushed garlic add spinach until cooked. Leave to cool.
Heat Pasta sauce & tin of tomatoes, then pour half into baking dish.
Mix soft cheese with cooled spinach mix and season to taste.
Use piping bag to fill the cannelloni with spinach mix and soft cheese.
Place cannelloni into sauce in dish and cover with rest of sauce and cream.
& bake....
