Lemon-Berry Chicken Salad

Ingredients
Blueberries, fresh or frozen, 2 cupsLow Fat Lemon Greek Yogurt (5 or 6 oz)Light Mayonnaise 3 tbspSalt, 1 tspChicken Breast cooked and cubed 2 cups (can use Turkey breast instead)Scallions thinly sliced 1/2 cupCelery sliced 3/4 cupRed Bell Pepper finely diced 1/2 cup
Directions
Take 1/4 cup of blueberries and put aside for garnish. In medium bowl combine lemon yogurt, mayo and salt. Add the remaining ingredients-blueberries, chicken cubes, scallions, celery, red pepper and GENTLY mix together.

Cover and refrigerate for 30mins or more.
Serve on fresh lettuce leaves or endive, and garnish
with reserved 1/4 cup blueberries and fresh lemon slices.
