2 large tomatoes, diced1 whole jalapeno pepper, seeds removed, finely diced1 large shallot, peeled and finely diced2 TBS finely chopped cilatrojuice of 1 limekosher salt
In a medium, non-reactive bowl, place all items. Toss to coat with lime juice. Add kosher salt to taste. Allow to sit at room temperature for 30 minutes for flavors to blend.
