Angie's Tuna and White Bean Salad

Ingredients
2 6- ounce cans tuna, drained1 15 ounce can cannellini beans, drained and rinsed1 12 ounce jar roasted red peppers, drained and roughly chopped2 tablespoons caperszest of 1 lemon1 tomato, chopped (optional)3 tablespoons fresh lemon juice1 tablespoon extra-virgin olive oil1/2 teaspoon salt1/2 teaspoon black pepper
Directions
In a large bow;, combine the tuna, beans, red peppers, capers, lemon zest and tomato (if using). In a separate bowl, whisk together the lemon juice, oil, salt and black pepper. Pour the vinaigrette over the tuna mixture and gently toss.
