4 chicken thighs8 -10 cups of water1 cup long grain white rice6 dried chinese mushrooms, rehydrated and sliced thinly2 tbsp salt
Place all ingredients in a slow cooker, cook on high for 4or 5 hours, or on low for 8-10 hours. Take chicken pieces out and shred them with a fork. season further to taste, you can add more salt, pepper, soy sauce, cilantro (chopped), green onions (finely chopped), salted peanuts, chinese donuts, etc.... as you like.
