peanut butter cookies

1 c all pupose flour1/4 tsp baking soda1/8 tsp salt3 tbs softened butter2 tbs chynky peanut butter1/2 c packed brown sugar1/4 c granulated sugar1 tsp vanilla extract1 medium eggcooking spray
Beat peanut butter and butter til light and fluffy. Gradually add sugars until well blended. Add vanilla and egg and beat well. add flour, soda and salt and mix well. turn dough out onto plastic wrap or wax paper & shape into a 6" log. Wrap log in plastic wrap or wax paper and freeze for 3 hours. Place in refridgerator until ready to use.
Preheat oven to 350F
Log can be cut into 24 slices. Place one inch apart on cookie sheet sprayed lightly with cooking spray. Bake at 350F for 8-10 mins. Remove from sheet and cool on racks.
