Cheesy Baked Eggplant Pizza

Ingredients
1 EggplantSpinachPart-skim Mozzarella CheeseSpaghetti SauceBread CrumbsEgg WhiteOlive Oil
Directions
1. Cut eggplant into about 1 inch slices.
2. Dip each eggplant slice into your egg white, then the bread crumbs (I actually seasoned the bread crumbs with italian seasonings, your choice).
3. Spread a dab of olive oil on each slice.
4. Cook the eggplant on a cookie sheet at 350 degrees for 10 minutes.
5. Flip the eggplant slices, add a little bit of olive oil and cook another 10 minutes.
6. Add the spinach, spaghetti sauce and part-skim mozzarella cheese on top of each eggplant and cook another 10 minutes.
7. Serve immediately. Enjoy!
