Simply Roasted Red Beet Salad

Ingredients

3 medium beets, fresh and unpeeled1/2 TBS olive oil1/4 tsp ground black pepper1/4 tsp kosher salt1/2 TBS Balsamic vinegar
Preheat oven to 350F.
Remove stems and leaves from beets, leaving about an inch. Rinse and pat dry. Place beets on a large piece of aluminum foil, big enough to create a packet for the beets.
Season with olive oil, salt and pepper. Seal up foil edges.
Roast for 60 minutes or until tender to the touch.
Remove from oven carefully. Place roasted beets in cold water for 15 minutes or until cool enough to handle. Wearing plastic or latex gloves, rub the skins off the beets.
Once beets are peeled, slice. Sprinkle with balsamic vinegar. Serve warm or chilled.
