Spicy Kale

Ingredients
Fresh organic uncooked KaleOrganic Cold Pressed Extra Virgin Olive OilSea Salt or Kosher salt (to taste) Juice of 1 lemon (or 1/2 - to taste) Red Pepper Flakes
Directions
Makes enough for 4.

Clean the kale, rinse well in cold water, dry and separate into bite sized peices.

Place in bowl and coat with Extra Virgin Olive Oil.

Sprinkle salt on the kale (to taste)

Juice a lemon (you can use 1/2 the lemon for less lemon flavor or 1 whole lemon - it's up to you)

***it helps to make this in a plastic bowl with a lid and shake the kale after the Olive oil is added and after the lemon is added***

Sprinkle red pepper flakes over the kale and shake again.

**Let the kale sit for 10 minutes, this will allow time for the olive oil, lemon, salt and red pepper to sink in***

    I've been using Cayenne pepper instead of pepper flakes; whoops! But it's great tasting and cutting back on the oil seems to bring the flavors out even more. Thanks for posting this!! - 4/3/08
