Extra Virgin Olive Oil, 1 TbspOnions, 2 mediumBeef, tip round, 1 1/2 lbsBlack pepper, 1 tspCarrots, chopped, 12 ozRed Potato, 3Garlic cloves, 2Red Wine, 1 1/2 cupsRed Wine Vinegar, 1/3 cupBeef broth, 2 cupsThyme, dried, 1 tspTomato Paste, 1 TbspFlour, white, 1/4 cup
Cook sliced onion in olive oil over medium heat, until onion becomes translucent. Season chopped beef with pepper, cook until all sides are browned. Add remaining ingredients except flour, bring to simmer, cook, covered, over low heat until meat is tender and vegetables are cooked. Whisk in flour to thicken sauce. Cook for 15 minutes longer or until thickened, covered.
