Ingredients
Butter, salted, 1 tbsp *Onion (fresh), .125 cup *Potatoes O'Brien, Frozen (Kroger), .25 cup *Sausage- Jimmy Dean reduced fat pork sausage (cooked), 1 oz *HEB Ready,Fresh, Go TX style Mild Pico de Gallo, 2 oz *Kroger Tortilla Chips, Traditional Gold, 11 chips, 1 serving *Egg, fresh, 2 large *Milk, 2%, 2 tbsp *Cheese - Kroger Shredded Mexican Style, 0.25 cup
Directions
Melt butter in frying pan on medium-high. Add in a couple tbsp of chopped onion and 1/4 cup of frozen O'Brien potatoes, toss to coat lightly with butter. Cook and toss occasionally until golden brown. Add in pre-cooked sausage and toss together. Turn down heat to medium. Add pico de gallo to the side and let liquid evaporate off a bit before tossing in with the rest. Add crumbled tortilla chips.

Beat eggs with 2 tbsp milk. Add to the pan and toss gently until cooked. Top with cheese and toss in. Split into three servings.
