3/4 cup whole wheat pastry flour3/4 cup Bob's Red Mill whole grain high fiber ceral1/2 cup brown sugar1 tsp baking powder1 tsp cinnamon1/2 tsp baking soda1/3 cup banana, mashed1/2 cup plain yogurt1 whole egg2Tbsp light olive oil1/2 tsp vanilla1/2 shredded carrot1/2 cup chopped dates or prunes1/2 cup chopped walnuts
Lightly grease or line muffin tin with paper cups. Fill 2/3 full. Bake at 400 degrees F for 18-20 minutes.
