Batter:almost 1 c. Purvia1/2 c. unsalted butter1 c. almond flour1 tsp. baking powder1.5 tsp. cinnamon1/2 tsp. vanilla extract2 egg whites0.5 oz lemon juice0.5 c. soy milkIcing:1 c. coconut milkrest of cup of Purvia1/2 tsp. vanilla1/2 tbsp. honey
Cream Purvia and butter in large bowl.
In separate bowl, mix flour, baking powder, cinnamon.
In another bowl, whisk egg whites, vanilla, milk, and lemon juice.
Add solids and liquids alternating in thirds.
For icing:
Beat coconut milk and vanilla on med. speed until soft peaks.
Add Purvia and Honey, beat until stiff peaks. Don't over mix, should be light and fluffy.
Serving Size: Makes about a dozen cupcakes.
