Ingredients
1 medium Zucchini sliced into pieces1 large onion cut into larger slices3 plum tomatoes sliced1 green pepper cut into small slicessmall bunch of cilantro (about 3-4 tbsp) cut up2 tbsp of olive oil
Directions
Heat the olive oil and onions on medium heat until translucent. Then add the zucchini in layers. Cover and let simmer for 5-10 minutes in order to allow the zucchini to cook. Then add the green pepper, tomato and cilantro. Cover again for about 5 minutes. Then uncover and let cook on low heat.
