Steve's Basic Guacamole

Ingredients
3 Haas avocados (halved, seeded and peeled)1 lime, juiced1/2 tsp (kosher) salt1/2 tsp ground cumin1/2 tsp cayenne1/2 medium onion, diced1 medium tomato, seeded and diced1 tbsp chopped cilantro1 clove garlic, minced
Directions
1. Place scooped avocado pulp in a large bowl and cover with lime juice to coat. Drain and reserve lime juice for later.
2. Add salt, cumin, and cayenne; mash with a fork.
3. Fold in onions, tomato, cilantro, and garlic.
4. Add 1 Tbsp of the reserved lime juice.
5. Let sit at room temperature for 1 hour before serving.

Serving Size: Makes approximately 3 cups. A serving is about 1/4 cup (therefore: 12 quarter-cup servings per batch)
