Quinoa with Peaches and Creamy Yogurt

Ingredients
1 cup quinoa2 cups water1 teaspoon ground cinnamon1 teaspoon ground nutmeg1 large fresh peach, pitted & chopped1/2 cup fat-free yogurt2 Tbsp honey, or to taste1 pinch ground nutmeg1 Tbsp lemon juice, or to taste
Directions
1. If Quinoa is not pre-rinsed, rinse quinoa in plenty of cool water to remove coating if using quinoa that is not rinsed. Drain. In a saucepan, bring 2 cups of water to a boil & add the quinoa. Reduce the heat to low, & simmer until tender, about 15 to 20 minutes. Drain off excess water, & add the cinnamon & 1 teaspoon of nutmeg.

2. In a separate bowl, combine the chopped peach with yogurt. To serve, put quinoa in a bowl, & top with about 2 TBSPs of the peach yogurt. Finish with a drizzle of honey--a teaspoon or so, sprinkle with nutmeg, & add about a teaspoon of lemon juice over the top.
