Slow Cooker BBQ Pulled Chicken

Ingredients
1.25 pounds boneless, skinless chicken thighs1/2 medium onion, cut into wedges3/4 cup water or chicken stocksalt and pepper to taste1 cup (or more) Sweet Baby Ray's Honey Chipotle BBQ Sauce (or other favorite/homemade)
Directions
Placed the cut onion into the bottom of your slow cooker. Salt and pepper the chicken thighs and place on top of the onions. Add the water/stock. Cook on low for 8 hours (or 4 hours on high). Remove chicken from pot and pull apart with two forks. Mix with BBQ sauce and serve hot on a bun or alone.
