Spicy Thai Red Curry Chicken

4 Chicken Breasts1 can coconut milk2 tbsp red curry paste2 tbsp brown sugar2 tbsp fish sauce2 cups frozen oriental veggies2 cups sliced mushrooms2 tbsp fresh cilantro1 cup(uncooked) brown and wild rice
Start cooking your rice, following package directions.
Cube chicken breasts. Slice your mushrooms. Heat on med-high 1 can(or one cup) of coconut milk, with 2 tbsp Red Curry paste until it boils(about 5min). Add fish sauce and Brown Sugar. Add diced chicken, and cook through, about 10min. Add all your veggies. simmer another 5min. Add cilantro, and serve over rice.
