Vegan Russian Dressing

1 package lite silken firm tofu2 1/2 tbsp apple cider vinegar1 1/2 tbsp sucanat1/2 tsp garlic powder1/4 tsp dry mustard (spice)1 tsp nusalt (for lower-sodium version)3/4 cup One-Carb Ketchup (no sugar added)3/4 cup sugar free sweet relish
Combine all ingredients EXCEPT ketchup and relish in food processor and blend until smooth. Once it's "creamy" pour into bowl and stir in ketchup and relish. Store in refrigerator, serve cold. Keeps for about 1 week.
