Curry chicken

Ingredients
Trader joes Curry simmer Sauce2 large chicken breasts, cubed2 T EV Olive Oil1 can Chick peas, drained and rinsed1 can white beans, drained and rinsed1package frozen artichoke hearts, defrosted4 cloves garlic, minced1 cup cilantro and jalapeno salsa2 t ginger powder1 t cumin1 t smoked paprika1 T lemon zestJuice of one lemon2 t ground cinnamon1 t ground coriander1/4 cup fresh cilantro, chopped1cup crumbled feta cheese16 oz cooked brown rice
Directions
Makes 8 2 cup servings

Add olive oil to medium size pot, place over meduim high heat and add chicken and brown each side, aprox. 5 min. Turn heat down to medium and add garlic cooking with chicken until fragrant.
Add all ingredients but cilantro, feta cheese and brown rice. Simmer for 15-20 minutes until all parts are heated.

Heat rice and scoop aprox 1 cup on plate or in bowl, add 1 cup curry chicken mixture on top and add 2 T feta cheese and 1 T chopped cilantro.
