Zucchini Rice Scramble

Ingredients
2 tablespoons olive oil 1 cup brown basamati rice, cooked1 cup shredded zucchini1/4 cup onion1 teaspoon turmericsalt & pepper to taste
Directions
Heat olive oil in skillet. Cook onion until tender. Add zucchini, cooking for about 3 minutes. Add rice to heat through. Push ingredients aside in pan to make room for egg. Add egg to space in pan. Cook 2 minutes, until set. Stir egg in with the rest of the ingredients in pan. Add turmeric, salt and pepper.
