Green Curry with Chicken and Rice

3 boneless skinless chicken breasts1 yellow onion chopped1 bell pepper chopped1 cup Trader Joe's green curry simmer sauce1 cup Basmati Rice (uncooked)1 small can Green Chilis1 tbsp Olive Oil3/4 cup frozen peas
PreHeat Oven to 350
Lightly season chicken with cayenne pepper and pepper
Place on foil and bake in oven until done (about 15-20 minutes). Cube chicken. Set aside.
In a sauce pan cook rice to package directions. Set aside.
In a large skillet, fry onion in olive oil. Add green chilis. Add chicken. add chicken. Pour curry sauce over top. Add bell pepper and frozen peas. Cook for 10 minutes. Stir in Rice.
Serving Size: Makes 6 1-1.5 cup servings
