Couscous & Tofu Salad

Ingredients
1.25 cups couscous185g firm tofu2 tablespoons pumpkins seeds2 tablespoons sunflower seedsoil spray1 tsp garlic (crushed)8 cups mixed salad greensblack pepper to tastelime juice to taste1.25 cups boiling water (for couscous)paprika to taste
Directions
Spray pan lightly with oil. Add garlic pumpkin seeds & sunflower seeds.
Add in diced tofu, paprika & black pepper.
Stirfry until you can hear pumpkin seeds 'hissing' and the tofu is browned.

In a medium sized pop place the couscous and cover with 1.25 cups of boiling water. Cover immediately leaving for at least five minutes. When done, fluff with a fork and add to the tofu and seed mixture.

Place approx 2 cups of salad onto each place and add the couscous mixture. Enjoy.
