Green Pepper Meat Loaf

Ingredients
2 Eggs, lightly beaten2 medium green peppers, chopped1 medium onion, finely chopped1/4 cup chopped celery leaves1/4 cup minced fresh parsley1 envelope onion soup mix1 pound bulk pork sausage4 bacon strips, optional
Directions
In a large bowl, combine eggs, green peppers, onion, celery leaves, parsley and soup mix. Crumble beef and sausage over the mixture and mix well. Do not over mix as this will cause it to be tough. Shape into a 12 x 4 inch loaf and place in shallow baking pan. Bake uncovered at 375 for 1 hour. Place bacon strips over the top and continue baking until no longer pink in the middle.
