lemony Chicken Rice Salad

Ingredients
3 green onions (chopped)2/3 c. brown rice (uncooked)8 oz chicken breast (cooked, diced)1/2 c. lite or fat-free mayo/miracle whip1 T. lemon zest3 T. lemon juice1 tsp splenda1/2 tsp pepper
Directions
cook rice a ccording to direction and let cool. Cook chicken as you prefer. when everything is cool put rice/chicken and diced green onions in a bowl. In another bowl combine mayo, zest, lemon juice, splenda and pepper. Mix well and combine with chicken/rice mixture. Put in refrigerator for 1-2 hours to allow dressing to marinate with chicken/rice.
