Chickpea Salad In Lettuce Cups

Carrots, raw, 1 cup, grated Scallions, raw, .33 cup, chopped *Lemon Juice, .5 cup Cilantro, fresh, 1 cup *Kosher Salt, 4 tsp *Pepper, white, 1 tsp *Extra Virgin Olive Oil, 2 tbsp Iceberg Lettuce (salad), 8 leaf, large Chickpeas (garbanzo beans), 3 cup
rinse chickpeas and allow to drain.
chop scallions & cilantro, add to a large bowl
rough shred carrots
add in lemon juice, salt, pepper, olive oil to bowl and mix well.
add chickpeas and mix well. allow to sit in refrigerator to marinate 4 hours or overnight.
Serving Size: makes 8 3/4 cup servings
