Quiche Lorraine

Ingredients
2 (9 inch) pie crusts8 slices bacon, fried and drained1 cup shredded cheese, cheddar1/3 cup minced onion1 (15 oz. container) egg beaters -I used Southwestern in the original, but you can use any kind you want1 1/2 cups of evaporated milk or fat free half and half3/4 tsp. salt1/4 tsp. sugar1/8 tsp. cayenne pepper (this is essential, it gives it that extra kick of flavor)
Directions
Heat oven to 425 degrees. Prepare your pie shells. Sprinkle bacon, cheese and onion in the pie shell. Beat eggs slightly; beat in remaining ingredients. Pour mixture on top of bacon, cheese and onion. Bake 15 minutes.
Lower oven to 300 degrees. Bake 30 minutes or until knife inserted 1 inch from edge comes out clean. Let stand at least 10 minutes before serving.
