2 cups cooked skinless chicken breast, shredded1/2 cup chopped celery1 tablespoon lemon juice1/4 teaspoon of black pepper1/2 cup of fat-free mayo1/2 teaspoon of curry1/2 chopped apple1 chopped shallot1/3 cup of dried cherries
Makes 6 servings. Poached chicken works well in this tasty chicken salad. Assemble and chill to allow flavors to meld. Substitue other dried fruits, such as cranberries or raisins for the cherries.
