Hearty Ground Beef Soup

Ingredients
1 lb ground beef3 cans beef broth (low sodium) (14oz)1 can diced tomatoes (14.5 oz)2 medium potatoes, cubed3 medium carrots, chopped1 medium onion, chopped1/2 cup celery, chopped1 1/2 tsp salt1/4 tsp pepper1/4 tsp oregano1 cup frozen mixed vegetables (or more if you like)
Directions
Brown ground beef in large pot, drain fat. Add all remaining ingredients EXCEPT frozen mixed veggies. Bring to a boil, reduce heat, cover, and simmer for 15 minutes or until potatoes and carrots are tender. Add frozen mixed veggies (may use only green beans if preferred, may also use fresh). Simmer 15 minutes or until veggies are tender.

I used 80% lean ground beef for this recipe because it was cheapest, so that's what the nutritional value is based on. For a healthier soup, use leaner ground beef.
