Quinoa Salad

Ingredients
1.5 cups uncooked quinoa, rinsed2 cans no salt added corn2 cans no salt added black beans1 large onion, chopped1 cup diced tomatoes1.5 tbsp olive oil6 tbsp lime juice1 tbsp ground cumin1 tsp garlic powder1 tsp oregano1 tsp black pepper1 tsp cayenne pepper
Directions
Rinse quinoa (or buy pre-rinsed quinoa) and cook in 3 cups of water.

Mix cooked quinoa in large bowl with corn, beans, onion and tomato.

Mix olive oil, lime juice, and one tablespoon of water with spices and stir into quinoa mixture.

Serving Size: Makes 14 1-cup servings
