Roasted Red Pepper Balsamic Vinegarette

Ingredients
One 7.4 oz. jar Trader Joe's Fire Roasted Red Peppers50 g. chopped shallot.5 cup olive oil.25 cup Balsamic Vinegarsalt and pepper to taste
Directions
Drain and coarsely chop roasted peppers and place in blender. Combine olive oil and shallot and microwave for 2 minutes on high power. Add shallot and olive oil mixture and rest of ingredients to blender and combine until smooth. Makes 24 one ounce(2 tbsp) servings. You may add your favorite fresh herbs or pesto to create a nice variation.
