Cooking Light Cauliflower Soup

Ingredients
1-2 heads of caulifower (appx 4-5 cups)2 c chopped onion2-4 tbs butter 3 large chopped potatoes1/2 cup chopped carrots8 cups chicken broth (calculated with 99% fat free)1 tsp Pepper
Directions
Melt 2-4 T butter in large stock pot. Add onion and brown.

Chop potatoes, carrots and cauliflower into small pieces (smaller than stir fry size). Add to pot and cook until cauliflower starts to brown.

Add broth, boil. Add pepper, reduce to simmer and cook untnil veggies are tender.

Serving Size: Makes 7-10 servings depending on size. Calculated at 7
