Caramel Apple Cheesecake Bars

Ingredients
Crust1 cups flour½ cup brown sugar1/2 cup softened unsalted butterFilling2 packages softened cream cheese½ cup granulated sugar2 Tbsp granulated sugar2 large eggs1 tsp vanilla3 granny smith apples, cored, peeled and finely chopped½ tsp cinnamon¼ tsp nutmegTopping1 cup brown sugar1 cup flour½ cup cooking oats½ cup cold unsalted butter½ cup caramel topping
Directions
1. Preheat oven to 350 Degrees. In a medium bowl combine flour and brown sugar. Cut in butter with a pastry blender until mixture is crumbly.

2. Press into 13x9 Pyrex dish. Bake for 15 minutes or until lightly browned.

3. In a large bowl beat cream cheese with ½ cup of sugar at medium until smooth.

4. Add eggs 1 at a time and vanilla. Pour over warm crust and set aside.

5. In a small bowl stir together chopped apples, remaining 2 Tbsp sugar, cinnamon and nutmeg.

6. Spoon evenly over cream cheese mixture.

7. To make streusel topping combine brown sugar, flour, ½ cooking oats and softened butter in a medium bowl.

8. Sprinkle streusel topping over apples.

9. Bake for 30 minutes or until filling is set.

10. Let cool completely.

11. Drizzle with caramel topping and serve.
