Slice chicken in 1/2" strips.
Brown chicken in olive oil with garlic to taste and set aside.
Slice mushrooms and sautee' in olive oil until almost done, add sliced peppers and sliced onions. Cook until tender. Add canned tomatoes (I like diced organic). Season as desired. Add chicken and allow to cook together over medium heat until chicken is cooked through and vegies are as tender as desired.
Serving Size: makes 4 servings
