Sweet potato and carrots with ginger

Ingredients
2 sweet potatoes4 carrots1" piece of fresh ginger
Directions
Chop the sweet potatoes and carrots roughly (scrub them if you leave them in their skins), then grate the fresh ginger and add to the veg. Boil everything together in enough water to cover until the vegetables are tender.

This is a lovely, tasty way to enjoy sweet potato and carrots - full of vitamins and not too high in calories!
