Potato Leek Soup

Ingredients
potatoes, leeks, water, better than boullion vegetable base
Directions
Cut off bottom and dark green parts of leek leaves. Split down the middle. Cut into half inch slices. Rinse well. Quarter potatoes and slice into half inch slices.

heat sauce pan to medium. add olive oil and leeks. Cook until soft. Add potatoes, water, and boullion. Simmer for 15-20 minutes.
