    1 medium Zucchini sliced into pieces
    1 large onion cut into larger slices
    3 plum tomatoes sliced
    1 green pepper cut into small slices
    small bunch of cilantro (about 3-4 tbsp) cut up
    2 tbsp of olive oil


Don't over cook is the most important thing.


Heat the olive oil and onions on medium heat until translucent. Then add the zucchini in layers. Cover and let simmer for 5-10 minutes in order to allow the zucchini to cook. Then add the green pepper, tomato and cilantro. Cover again for about 5 minutes. Then uncover and let cook on low heat.

Serving Size: Makes 5 servings of 1-cup
