Ingredients

Crust:
1.25 Cup unbleached flour
1 tsp sugar
1/2 tsp baking powder
1.25 tsp salt
3 tbsp butter
2 tsp veg. oil
3 tbsp cold water
Pie "Filling":
2-3 apples
Apricot fruit spread
2 tbsp sugar
2 tbsp ground cinammon
Cut two or three apples in two halves, core and slice thinly and evenly. Fan out and spread in the crust. Sprinkle with 2 tbsp of sugar, and 2tsp of ground cinnamon. Bake at 350 F for thirty minutes.
Cook 2 tbsp of apricot jam in water, until it thickens a little. Brush entire pie with jam. Bake for another 15 minutes or until crust is done.
