Introduction

A 1 calorie cookie. Amazing flavor/texture! A 1 calorie cookie. Amazing flavor/texture!
Number of Servings: 16

Ingredients

    1 large egg white
    Dash of salt
    1/4 teaspoon vanilla extract/flavoring
    1/3 cup Splenda(or any other no calorie sweetener)

Directions

Separate your egg.
Beat egg white on low speed for 30 seconds. Then beat on high until white. Add salt and vanilla.
Beat on high until stiff, glossy peaks form (you can check this by turning it off, lifting, and little points should come off of the ends of the beaters).
Turn the beaters on low and gradually add the sweetener until it is all mixed.
The mixture should look like old fashioned whipped cream.
Grease baking sheet* and preheat your oven to 325.
Use a teaspoon to plop down 16 of these. Bake in the oven for about 18 minutes**.
When the highest part of the meringue is brown, you know it's done. Cool. Eat 'em up!

* I always put aluminum foil down on a baking sheet and then spray with non-stick spray.
** WATCH THEM by the 15 minute mark. They could be done before or after the given 18 minutes.

Different variations.
Adding any flavor-banana, mint, strawberry, etc....
Topping-powdered sugar, cocoa, crushed up candy cane...
Adding to the mix-chocolate chips(try to get the minis), toffee pieces, more crushed up candy cane.
(Make sure to add up the extra calories for extras.)

    I thought the cookies were good, but I have quite a sweet tooth so when I made my second batch, I added more Splenda and vanilla and it was much better. - 8/29/09
