Ingredients

    2 Eggs, teaspoon vanilla essence (if you like), 1 cup fage greek yogurt non fat, 2 cups warm water, unbleached bread flour 2 cups

Directions

Beat eggs and vanilla together. Add luke warm water while briskly beating the eggs into a froth. Rapid beating prevents cooking the eggs with the warm water. Add yogurt, beat. Add flour and beat. Your mixture will be thin. Pour 1/2 cup of mixture into a warm pan (spray oil for non stick). Swirl and tilt pan to make sure the entire surface area is covered. Cook on medium for a minute or two until light brown, flip and repeat. Makes for 18 crepes at 63 calories each. Use a filling such as steamed spinach, non fat cheese and ground turkey to change from breakfast to gourmet dinner.

    This turned out well enough . I filled them with frozen coolwhip and topped with a drizzle of thinned sugar free strawberry jam. 2 crepes made a nice light dessert - 11/3/18
