Low Cal, added fiber & Delicious
Here is one for those watching Sugar, Calories and looking to add fiber to their daily food intake.
Made with Splenda, Healthy and guilt free
Great for a pudding snack or as a party dip.
I use it as a dip for graham crackers and vanilla wafers.
I tried this recipe when visiting in Maine at a little country flea market and I personally am not a fan of Rhubarb. When I have a chance to get Rhubarb, I grab it now!
Also my spouse doesn't know there is Rhubarb in it and he loves it. The Rhubarb and blueberries compliment each other.
This is my mom's recipe, and she bakes it in an iron skillet. She substitutes the water in the cake mix with the same amount of pineapple juice from the crushed pineapples. It makes for a very moist and sweet cake! No one will ever know it's made with Sugar Free ingredients (unless you tell them!). Guaranteed!!!!
