Introduction

I made this trifle for my mom (who is diabetic) for her birthday. It turned out REALLY yummy. What little bit of sugar is in here, could either be left out completely or could be replaced with another sweetener. The agave nectar is low on the glycemic index. Ingredients

    1 pkg Jell-o Instant Sugar Free, Fat Free Pudding - Cheesecake
    1 pkg Jell-o Instant Sugar Free, Fat Free Pudding - Chocolate Fudge
    1 (8oz) pkg Neufchatel cheese
    1.5 Tbsp Agave Nectar
    1 large banana, sliced
    4 nectarines, peeled, pitted, cut into chunks
    1 lb strawberries, hulled, quartered
    1 tsp sugar (mixed into strawberries)
    1 (14oz) can pineapple chunks in unsweeted juice, drained
    1 sugar free angel food cake
    1 cup Cool Whip Lite

Directions

Slice angel food cake into 1/2"-3/4" cubes. Set aside.
In 2 separate bowls, prepare each pudding according to directions (2 cups of non-fat milk per mix). Whip neufchatel cheese with agave nectar. Stip into Cheesecake pudding. Refrigerate puddings until you assemble the trifle.
In a trifle bowl, layer as follows:
1. cake
2. cheesecake pudding
3. bananas
4. pineapple
5. chocolate pudding
6. cake
7. nectarines
8. cheesecake pudding
9. strawberries
10. cake
11. chocolate pudding
12. cool whip

Top with sliced almonds, if desired (not included in nutritional analysis)

Serves 10
(Each serving was basically one (large kitchen) spoon dug to the bottom. It looked like about 1 cup, give or take.)

    Good ideas with your recipe. My husband makes trifle several times a year and it is always the hit of the party. He uses fat/sugar free vanilla pudding only. No cream cheese. Strawberries, blueberries, kiwi, banana. So, similar to yours but his may reduce the sugar and calorie content a bit. - 8/9/09
