Ingredients

    375g (13.22 oz) dates, chopped
    2 tsp. instant coffee
    1 cup self rising flour
    1⁄4 cup slivered almonds

Directions

Add coffee to 1 cup of boiling water and mix. Pour over dates and soak overnight. Stir in flour. Pour mixture into a paper lined loaf tin, sprinkle with slivered almonds and bake in a preheated 320°F oven for 45 minutes.

Optional: Serve warm with some low sodium, low fat butter.

Serving Size: 1/4 of the loaf cake.

    Doing it tonight, making 2 cakes, one for the hubby & one for me, using glut free flour for mine, I will post how good both cakes turned out!
    Firstly, a normal size loaf tin was used, only made the glut free. Needed 30 extra minutes baking, perhaps test until cooked, a very moist tasty cake!
