Olive Oil, 2 tbsp (remove)Butter, unsalted, 2 tbspGarlic, 2 clove – finely choppedZucchini, baby, 2 medium Onions, raw, 1 medium (2-1/2" dia) cut into 1\4 nch dice*Peppers, sweet, red, fresh, 2 medium (approx 2-3/4" long, 2-1/2" *Lima beans, frozen, cooked, rinsed under warm water and drained 2 package (10 oz) yields 3 cups Yellow Sweet Corn, Frozen, (4 ears)Course salt and freshly ground pepper1 tbl coarsely chopped sage1 tbl thyme
In large skillet, heat oil and butter over medium high heat. Add garlic and onion, cook until translucent, about 4 minutes. add bell peppers, zucchini, lima beans and corn. Season with salt & pepper. Cook stirring occasionally until vegetables are tender, about 10 minutes. Stir in herbs and serve.
