Taco Cornbread

Ingredients
1 box Jiffy cornbread mix1 lb ground beef1 medium onion chopped1/4 C ketchup2 large eggs1 C frozen corn1 can chopped mild or medium chilies1/4 C non-fat milk1 C shredded cheddar/ colby jack cheese
Directions
Cook the ground beef and onion until no longer pink. Drain well and add ketchup and mix well. While the beef is cooking, in a separate bowl mix together the cornbread mix, eggs, peppers, corn, milk, and 1/2 cup of cheese. Mix well. Pour 1/2 the batter into greased 7"X11" pan. Top with the beef mixture. Pour the rest of the batter on top of the beef and sprinkle the remaining cheese on top. Bake at 350 degrees for 40-45 minutes or until the top is pulling away from the edges.
Makes 6 servings. **Optional top with sour cream and salsa before serving.
